Indeed I do. particularly when it is not that important. You can also pastureize the yolk yourself with a double boiler. but again. perhaps more trouble than it's worth.

To be honest I ussually buy my mayo anyway unless I am trying to impress someone. Makes my arm tired with all that whisking.
