Yes, I do this with RO water which is almost the same mineral level of distilled, and cheaper. You need to target the water for the beer you are brewing. Don't over do the water salt additions.
For a Bo-Pils you would want to use CaCL2 to get the Calcium level up.
For a Geramn pils you can use some gypsum to get the Calcium and SO4 up, but don't over do the SO4.
