Recipe of the week: Maibock = 25 IBU..Is this right?
« on: March 07, 2011, 10:31:13 pm »
I plugged this recipe into pro-mash and found that the IBU's is 51.5 not 25 as stated in the recipe.

Am I doing something wrong?

MaiBock Fix
Recipe by George Fix from Big Brew 2002
Extract with grain
Ingredients for 5 Gallons:
8.5 lbs Extra Light Dry Malt Extract
0.5 lbs CaraVienna Malt

0.75 oz Hallertau Hersbrucker Hop Pellets, 4.75% AA, 30 min
0.75 oz Hallertauer Mittelfruh Hop Pellets, 4.5% AA, 15 min
Wyeast 2633 (if you can't find 2633, 2124 Bohemian Lager is a good second choice)

FG: 1.016-1.018
IBU: 25

If you don't get in over your head, how are you ever going to know how tall you are.

I get anywhere from 40 to 58 IBU, depending on which formula you use. That isn't out of line for the style - 25 would be pretty low. Could just be a typo.

Vital Statistics:
OG: 1.064 – 1.072
IBUs: 23 – 35
FG: 1.011 – 1.018
SRM: 6 – 11
ABV: 6.3 – 7.4%

I'd modify to the style range.  Probably 1 oz. of bittering will basically do it.

Edit:  that's if you are doing full-volume boil.  If you are doing a concentrated extract boil, say 2 gallons, then the calculated IBUs are close to 25 using the recipe as is.

Hi Mario,

Remember this recipe is from before 2002, so the ingredients and process may account for some differences.  More importantly, with an extract recipe it is assumed that you are doing a partial boil, so the utilization of the hop oils is reduced.  In your ProMash file, change the wort size to 3 gallons.  This will drop the IBUs some, but not all the way to 25.  This recipe was taken directly from the Big Brew recipes on the Homebrewopedia; feel free to make whatever adjustments you feel are necessary when you brew the recipe.

Cheers,

Thanks all, for clearing the partial boil / extract ibu contribution.  I've always wondered why a lot of recipes don't include anticipated IBU's...
