Low yeast for Hefe weizen
« on: March 26, 2011, 06:17:24 pm »
I read that for a WLP300 hefeweizen ale yeast is to pitch a little low but enough yeast to stress it for the aromas of a weizen yeast.  Has anyone tried this and to know how much is low to do that.  I figured for my volume since I have a fresh vial that if not a weizen but an ale I would pitch 1000ml.

Any suggestions would be nice.

Thanks

Erik

If the vial/smack pack is fresh a 1L active starter works really well for a hefeweizen. I do agree "slightly" underpithching for a hefeweizen works well.
