If you don't lager your Kölsch, how will you get it clear?  ;)

I respect CBC beers, so I'll have to look for that one next time I visit the old alma mater.
Yeah, the CBC and Will Meyers both rock. Their Kölsch (they call it Regatta Golden) is typically very fresh because it turns over quickly and similar to Reissdorf.

They way they do in Koeln, filtration.

Yes, the Malzmühle!  Best place to go to eat.  It's a little bit further away than the other places, IIRC.  I remember it as being one of the few that had wheat in it.  It wasn't my favorite Kölsch, but it did have the best meal.

OK, Gordon's tip for Köln.  Get off the train at the Hauptbahnhof, go straight to Früh, pausing momentarily to look at the Dom.  Do your style calibration there, then when hungry head towards the Malzmühle for dinner, stopping at whatever places you hit on the way.  Have the schweinhaxe, but you might want to consider sharing it.  It's a football of meat with a huge knife stuck in the side of it.  Crispy, crackling skin over luscious pork.  Eat the whole thing and you'll be done for the night.  Split it, and you'll be able to keep drinking.

Filter it, like they do there.  Even when I lager it, it never fully clears.  Really powdery yeast.  You can fine it with gelatin like a lager, since you're actually storing it at lager temps.

I can get mine pretty damn clear with WLP029, a tsp of gelatin and 2 weeks lagering./

I do the same.  The gelatin works and never causes any issues.  By the time it's carbed, cold and lagered for 2 weeks you have an excellent example of the style.  029 is great yeast.

+1 to Gordon's advice.

I use gelatin to clear this beer and it really clears after that. I like to lager it for about four weeks and serve.
