After slightly over 6 years of homebrewing, I'm finally getting around to doing something I've been putting off forever - brewing my first lager.

Oktoberfest....

Got my starter going last night.

I finally got around to building a fermentation chamber last fall and so I've been getting into lager brewing too.  Lager brewing can be just as much an obsession as homebrewing in general!

Yes it can...I have a Bo-Pils in the chamber for the next week or so.

Speaking of lagers, I'm hoping to make a Classic American Pils tomorrow.

Dang it!  I grabbed the wrong yeast last night.  I needed some White Labs WLP008.  Well, the supply shop I went to (Larry's in Kent, WA) they don't carry White Labs.  Only Wyeast.

Trouble is, I had two recipes in my head.  The next one will use WLP001 - and the Wyeast 'subsitute' for that one is their 1056.  So that's what I grabbed.  D'oh!  1056 is NOT a subsitute for WLP008.  In fact, there is no Wyeast substitute for WLP008, so now I have to make a trip today to the supply shop that's farter away (or I may see if I can find a new one - I don't feel like driving to Kirkland...).

EDIT: Well, I found 3 more supply shops, but one doesn't carry White Labs & the other 2 aren't open yet.  lol

Thinking of doing an ESB, throwing in a hand full of black patient, then doing the second runnings as an English Mild...wild thoughts at this point since I haven't even looked at the recipes.

Ballpark Pils (CAP).  Made a big starter today.  This will be batch number 100!! ;D

Congrats on #100!  I did a 100 gravity 100 IBU RIS for mine.  I've got #400 coming up in 3 batches and I'm trying to decide what to do for it.

You bet.  :)  I actually need to count up.  I'm not sure what batch # I'm on by now.  Time to review my beer logs when I get home.

Wow.  Including all ciders and the one time I did a mead, I've made only 44 batches in my brewing career - far less than I thought.  That means I only brewed 4-5 batches a year during the years I was actively brewing.

I think this is the year my brewing 'productivity' will increase.  I'll be up to 46 batches by next weekend.  I'm brewing a chamomile ale this weekend and an imperial IPA the next.  ;)  Also, virtually all of my batches have been 10 gallon since I went all grain (including the next 2 batches I'm brewing).  I need to start making more 5 gallon batches again, so I can have a greater variety of homebrews on hand at a time.  :)

I'm taking Friday off to brew up my second annual wee heavy.  Shooting for an OG of 1.118 or so 8)

Between the long mash and the long boil it's gonna be a long brewday.  But if I get started early enough I should be able to get wrapped up in time to throw back a few of last years batch in peace and quiet before the family gets home from school.

A "few" of last year's batch??  You won't care or even know when the family gets home :)

Okay, I had three so I'm back up to a few  ;D

I underestimated my efficiency a bit so OG was 1.126  8)

Brew is all set in the fermenter.  We'll see what it tastes like in 8 months or so.
