My 50 L Oak Solera has had beer in it since 4-6-10. It is currently full of the rochefort cherry w/ brett
and 8-10 # of fresh frozen balaton cherries marinating in the mix. (don't forget the mahleb)
Since harvesting last fall, It is almost time to harvest 5 more gallons of this. Tomorrow I am brewing
a rochefort to replace another pull from the solera.
What a wonderful journey. I have not sampled nor disturbed this for many many months....
kind of like a mysterious treasure.
