My 50 L Oak Solera has had beer in it since 4-6-10.  It is currently full of the rochefort cherry w/ brett
and 8-10 # of fresh frozen balaton cherries marinating in the mix.  (don't forget the mahleb)

Since harvesting last fall, It is almost time to harvest 5 more gallons of this. Tomorrow I am brewing
a rochefort to replace another pull from the solera.

What a wonderful journey.  I have not sampled nor disturbed this for many many months....
kind of like a mysterious treasure.   ;D 8)

That sounds delicious!  What kind of rochefort recipe are you working with?  I have a soured oak barrel that needs refiling and want to try something similar.

I did nothing unusual. I think I get real good results using the whirlyfloc and rapid cooling
with my immersion coil.  I have about 2 inches of break material in the bottom of my Hyd. Tube
that you cannot see due to skillful editing  ;D....and fyi, I just put break material and all straight
into the primary. (sorry took so long to post back to your question)

Bit too much carb today, I will stop with the gas it is fully carbed up...
Taste like sour cherry pie and smells like cherry...with a bit of the mahleb perfume.
It is good IMO....
