I'm testing out video server that the school I work for recently purchased. It comes pre-loaded with a bunch of educational videos, but you can also upload your own. There's already a "wine and spirits" category under "hobbies" and I thought it would be cool to add a brewing video. The problem is, everything I can find is streamed. Does anybody know where I can find a good video on brewing basics that can be fully downloaded?

I think you have an option to download Basic Brewing Videos.

On the other hand there is Copyright on them so that will not help.

Copyright aside, I'm pretty sure that's a chunk of James' livelihood. 20th Century Fox he ain't. Don't rip those videos... You can always pull the FLVs from youTube and stitch them up and re-encode them with iMovie or something.
