Funny you should mention that, I have some orange blossom honey coming my way as we speak.  I already make wine and hard cider though, they're like an Axe commercial (a reference for the post-Hai Karate crowd, which I am not one of).

A lot of times a name actually inspires a beer.

I'm the same way. Frequently, I try to come up with a pun, the worse the better, then build a recipe around it. The only exceptions are my American IPAs, since I almost always have one on tap and it just got tedious to try to name them after a while. The current one is labeled "IPA #18". Some recent beers, in no particular order:

Sex in a Canoe (American Blonde)
Big Dump Barleywine
Loosely it's a White with Lime Puns
Man in Black Lager
Caramel Chameleon
Llama Llager (quinoa adjunct lager)

I tend to just name the beer what it is, like Dort X #1 and then continue on with the numbers until I get something I believe to be a recipe that doesn't need fixing.  At that point sometimes (if I ever get that far) the beer will earn a name. Here are a couple

Poets Pale (named after a nephew)
Raspy Blonde (Raspberry Blonde)
Chordial Cherry (Cherry Baltic Porter)
Incarcerated Christmas (Baltic Porter, and a very long story)
Cinderellas Pumpkin (best served @ 40 F, in a glass slipper)
Bruised Bonch Blonde (best drank after a day of Mountain Biking, hence the name)

I used to just name them in sequential order acording to the city I was living in. ie Denver #4 or Dallas #3. I've started giving them names though.

I can go one further on the crazy train of naming beers. Not only do I name them, but since i'm a graphics guy I feel compelled to make a logo for them too...yeah, my crazy goes deep buddy.

So here's one of the logos for my unofficial brewery and beers:



I even recreated the logo for my new mash tun cooler once I remove the coleman sticker on the side:



Sticking with the Jersey Shore theme here are some of the beer names I came up with:

Seaside Stout
Toms River Red Ale
Boardwalk Brown Ale
Grandpa Louie's Cream Ale (named after my grandfather who loved genesee)
Jersey Devil IPA
Arrogant Ale
Fist Pump Porter
Pine Barrens Porter
Lone Pumpkin Ale
Nor'easter Winter Stout
Bleach Blonde Ale
Eagle Point Pilsner
Kiss O' Death (something my grandfather used to say)
Lighthouse Lager
Duck Dive Dunkel

Maybe you were thinking of the Bluesman formerly known as Prince?

Nice logo, Tony.  That bottle label looks better than most commercial craft beers.
