Loved the article.

I had one question about the sour starter. Would it be of benefit to acidify the starter to pH <4.3 to start off?

Well, I guess it worked.  The Rockyard brewpub in Caslte Rock challenged our club to all brew Berliner Weisse's and they would pick their favorite for their Summer seasonal and I  won.  Just  my luck, my first professionally-brewed recipe and it's a low gravity, sour wheat beer.  Yech!  I made them a 5 gallon sour "starter".

Zymurgy mails from the printer in Michigan.  They probably just walk yours over.  They send mine via canoe (I'm still waitng too).
