Mouthfeel is a general term used to describe how the beer feels in your mouth. The factors that can affect mouthfeel are numerous including: carbonation, alcohol, hop bitterness, acidity, dextrins, and diacetyl to name a few. Diacetyl can be difficult to diagnose for some judges and may be percieved as "full mouthfeel" whereas aother judges more sensitive to diacetyl will call it out as "diacetyl". I think diacetyl is best diagnosed by picking it up in the aroma and the mouthfeel.
