How to Ferment and Make Kim Chi?

I've never made Kim Chi, but I love the food.  Through a google search I found some generic recipes, but am wondering if anyone has some practical experience making Kim Chi.  If possible can you explain the process and maybe even help out with a recipe?
If you don't get in over your head, how are you ever going to know how tall you are.
