I am making a kiawe blossom honey – lychee melomel this weekend.  The yeast will meet the honey must in my 10 gallon Volrath stockpot/fermenter tomorrow (Friday 7/1).  On Saturday I’m going to pick, peel and freeze 20 lbs of Ninole lychees.   On Monday I’ll thaw, crush and add the lycees to the highly actively fermenting mead must.

Sunday I’ll be running a (3rd) anniversary batch of Very Old Dark Kilauea Ale in preparation for a 5 day campout at Spencer Beach, starting next Wednesday (fishing, diving, grilling, late night music and tall tales…)

Hawaii!

I'm brewing a black IPA after work tonight and am going to try adding the dark grains during the sparge rather than mashing them.

I'm going to be doing a 10-gal batch of Northern Brewer's Innkeeper recipe.  I think I saw someone else is doing that this weekend as well.  I'll be using a re-pitch (4th round) of NB Neobritannia as a yeast though.

Happy 4th everyone!

I want to brew a Cream Ale but need some yeast. I would use S05 but I don't think it would be as good. Maybe I'll give it a try.

Yes...it's the Holiday Weekend. Happy 4th of July!

At some point this weekend I'm brewing a Cream Ale.  SWMBO is having her family in for Christmas in August(?) and I need something for lite beer drinkers.

I will be brewing up a batch of popcorn ale.  My wife & I make it every year for a party we have at our place.  It will be one of 8 different homebrews we will be serving!

10 gal batch of Saison, split with SouthernBrews.  I'll use some Agave in mine.  Had the Agave Saison at Mother Earth when at the NHC.  Would like to recreate.

I had Lynux's cream ale with US-05, it was the best cream ale I've ever had, hands down.  No hesitation there.

Ok hefeweiss brewday yesterday; I remembered why I hate infusion step mashing - tough to hit the numbers  :D - hit 113 for the FA, but wound up sac rest at 149 and had to pull an unplanned decoction on the fly to get it up to 154 but that took about 20-25 min to get together, so I probably had almost full conversion at 149 by the time I got it back in - oh well, it will still make beer.

Wit was brewed yesterday.  I forgot to make sure i had oranges around so I'll have to add peel later in the week.  I think I'll drop an orange and a clementine into some star san before zesting with a microplane. Late hopping with Cascade to see how it combines with the orange and clementine peel.
