Hi! Got a lot of free windfalls this summer, so I had to bend the Mead Day Recipe rules and made 10 gallons of something like an apple metheglin hydromel out of sweet apples, floral honey, cinnamon, cloves and mace. Put a bit of maltodextrin for the sweetness as well. The must turned out similar to a mulling spices beverage or an apple pie. Yummy! Can't wait... Cheers!  ;D
