I think it sounds like a great plan, but no profit yet? How sustainable is it? Donated ingredients help lower the cost, it can catch on here with all the people concerned about waste and the hungry I guess.

   Waste not, want not.
   I know there are a couple organizations around here that very actively gather unsalable food from the grocery stores, I don't know if they collect from restaurants as well. Lots of ag around here so it isn't overly difficult to find a livestock producer who would be more than happy to turn food waste into bacon and hams. I'm guessing the folks in the Bronx don't have the same recycling opportunity.
I spent most of my money on beer, tools and guns, the rest I foolishly squandered on stupid stuff!
