Best Low Cohumulone Hops
« on: August 03, 2011, 04:21:00 am »
I'm getting ready to make a hoppy IPA soon and was hoping to get some ideas on the best way to use low cohumulone hops in the hop mix.  Furthermore, I can't seem to find a chart that fully lists the sprectrum of low cohumulone hops.  I have Warrior and Glacier on hand and know they are low cohumulone, but would like to have a full listing.  I know there are many, but a definitive source would be great.

Magnum and Horizon are my go to low cohumulone hops. That said, I personally don't care for any low cohumulone hop in IPA.  I want more "slap"!

The HopUnion varietal book gives typical analyses for almost all domestic (and quite a few foreign) hops.

Ahtanum is supposed to be a low co-humulone version of cascade. I've used it in a few side, experimental beers.

I just (unintentionally) brewed a lo-co IPA.  I used Citra as my primary bittering hop (22-24%) and Ahtanum (30-35%) as my primary flavor/aroma hop.  I will be also be dry hopping with Ahtanum, hopefully by the end of the week if the beer clears up a bit.  I'll let you know how it goes!

I use Warrior a lot to bitter hoppy american styles - crazy high alpha acid so you don't have to use much.   For IPA's I typically blend Warrior (or Horizon) with Chinook at around 50/50.  Depends somewhat on the total intended IBU's of the beer.  I don't like a really punchy bitterness so I usually only go up to 30 or 40 IBU with the Chinook.

One should add the following to a low Cohumulone list, in addition to the mentioned Glacier, Horizon and Warrior..

Simcoe  15-20%
Vangaurd  14-16%

Ahtanum at 30-35% is not in the low range, heck that is Chinook territory.

I guess I have old information

Ahtanum. Used for its aromatic properties and moderate bittering.. Aroma/bittering. Has much lower co-humulone than Cascade, so should be less harsh..

Looking at the hop dada base it is basically the same as cascade.  Don't care for Ahtanum much anyway.

Simcoe, Summit, Magnum, Apollo, and Amarillo are all pretty good Lo-co hops for bittering, though it seems like "waisting" them if they are hard-to-find dual-use hops.
