Mash @ 152 for 60 minutes
After primary add 7lbs mangos and dregs from 3bottles Orval and let sit 6-8 months.
Add new yeast at bottling

Wonderfully dry and refreshingly tart


This gets really good at 6+ months in the bottle

The latest version has been in the bottle since the end of May....All I can say is Merry Christmas. It's better than at 3 months and nearly as good as last time at 6 months

I need to plan this one so that it is ready for summer. While it's not a lawnmower beer, it drinks like one and can sneak up on you in a hurry ;)

Well, this beer was not specialty enough for the Sam Adams contest((and I listed the wrong base recipe >:( ) I was concerned about that), but they said that everyone who tried it, liked it

When you say "dregs from 3 bottles Orval" are you referring to the yeast cake in the bottle?

That would be correct. Orval is a good source for brettanomyces.

Orval adds Brett at bottling. Not sure how much of their primary yeast strain is still there by then. But definitely Brett.

IIRC from the Longshot judging, this was a very tasty beer. There were many beers that didn't seem to be Cat 23 beers; I remember that was the primary knock against that one. A fruit lambic is a Cat 17F. I think we basically tossed more than half the beers for the same reason. Hopefully it was judged well regardless of how it placed.

What mangoes were used? The smaller yellow ones or the larger green ones?
