Personally I really like WLP530. Ferments quick and violently - definitely need a blow-off tube for that one.
I also like the profile of WLP500.

I love WLP530 for my dubbel as well. Pitch around 64-66 and ferment in the high 60s, low 70s.

+3 for the Wyeast #3787/WLP530 for your Belgian-style Dubbel, but you may also want to consider Wyeast #1762/WLP540 if you're looking for a cleaner profile or the Wyeast #1214/WLP500 for the classic Chimay character.

Instead of just attaching a stopper with an airlock put a tube in to allow for overflow. Something like this although I like to use a 1" tube:
