freezing crabapples.
« on: September 18, 2011, 10:45:36 am »
I have about 5-6 gallons of cherry sized crabapples on my tree.  Usually I make a crabapple cider with them but this year I don't have time to mess with them.  Can I pick them, freeze them, and use them later like I do cherries?  If not for cider what kind of beer would they go well with?  I'm looking for an interesting alternative to the same old cider ::) every year

Sure. They'll be mush after thawing and you won't be able to press them, just add them as you would cherries.

They're probably a bit tannic I imagine? I don't know what I'd make, but I'd stay away from really bitter beers since the tannins and alpha acids will work together to make it very bitter.

Or you could press them and freeze the juice to use later.

Crab apples go great in mead.  My wife made a stout with our crab apples a couple of years ago that came out nice.
