List of killer yeast strains?
« on: November 01, 2011, 08:42:12 am »
Is there a list anywhere that shows what strains of yeast will kill off other strains?  I've done some looking around and didn't find anything other than a listing of real killer yeasts, as in ones that will/could kill you.

The reason being... I'm making the (in?)famous apple butter cyser and was thinking of fermenting initially with lalvin d47 and/or 71b-1122 and then finishing off with k1-v1116 since it has a higher alcohol tolerance than d47 and 71b.

Are these yeasts compatible with one another?  Or will they kill each other?  The epic battle begins...

Thanks for your help!

What? I have never heard of yeast that can kill you. for that matter I have never heard of yeast killing each other. out competing perhaps but are you talking about actual predatory behaviour?

Cool, thanks for the quick response!  I'll have to listen to that show.
Looks like the k1-v1116 will kill the others off when I add it in to get the gravity down after the others crap out.

And I was kidding about the yeasts that could kill you.  That wasn't very clear I guess.

I don't think any of the yeast actually kills another in a canabilistic sort of way. Some - like the K1-v116 - are aggressive and out-compete the other strains for resources.

I have used the K1-v116 for years making a lot of different wines. Its good stuff.

They don't kill the other yeast outright, they actually secrete a protein that prevents something...maybe enzyme formation or something that "kills" other yeast types.
I think Shea Comfort says a lot of the red wine yeast are killers.  You'll have to listen though, I am not familiar with the strains.

There are a few different killer yeast toxins, KHR and KHS come to mind.

http://www.yeastgenome.org/cgi-bin/locus.fpl?locus=KHS1

They generally work as above, secreted proteins that are taken in by susceptible yeast and kill them.

I would guess that killer yeast could lead to raised autolysis level, no?

I don't know that the dead cells automatically lyse (they might) but just having that many more dead cells could certainly lead to increased autolysis.

The way I read it, you are right tubercle.  It's not cannibalistic, they don't eat the other cells (unless they lyse and spill their contents, but then all yeast will go after those goodies).  It is more of a terrorist attack, spreading poison on the unsuspecting susceptible population. ;)
