What's funny is if this was in the "Ethnic and Regional Cuisine" thread it would be lauded as an Eastern European charcuterie delicacy! I have no problem with efficiently using meat, including the "nasty bits" that on their own, we wouldn't want. If they can make a decently edible sandwich out of it, then there's that much more that they aren't wasting.
