I bet the OP still needs answers.
Are you using water with high amounts of cabonate/bicarbonate?
You know, I think I did add some gypsum. Our water is a little soft here (new orleans). Can't remember how much off the top of my head, or if it was this batch or the batch before that. I'm at the Saints game now, or I'd check my records.
I appreciate all the feedback, and have ruled out a bad thermometer (2x checked it in boiling water) and lack of stirring (I always stir before getting a temp). Feel like that leaves bad crush or stale malt. None of my AG batches have been, well, good, but this last one was exceptionally bad.
