Ingredients

  • For 5 Gallons (18.93 L)
    • 8.5 lb (3.86 kg) Maris Otter pale malt
    • 5.0 lb (2.27 kg) Canadian 2-row pale malt
    • 1.0 lb (0.45 kg) white wheat malt
    • 8.0 oz (227 g) caramel-Vienna malt
    • 4.0 oz (113 g) whole Centennial, 10.5% a.a. (60 min)
    • 1.0 oz (28 g) whole Centennial, 10.5% a.a. (10 min)
    • 1.0 oz (28 g) whole Cascade, 8% a.a. (10 min)
    • 1.0 oz (28 g) whole Willamette, 5.4% a.a. (10 min)
    • 1.0 oz (28 g) whole homegrown hops (10 min)
    • 0.5 oz (14 g) whole Amarillo, 12.5% a.a. (10 min)
    • 0.5 oz (14 g) whole Citra, 13% a.a. (10 min)
    • 0.5 oz (14 g) whole Simcoe, 15.5% a.a. (10 min)
    • 1.0 oz (28 g) whole Centennial, 10.5% a.a. (dry)
    • 1.0 oz (28 g) whole Willamette, 5.4% a.a. (dry)

    • Wyeast 1056 American Ale yeast (1 L starter)
    • 1 tsp Irish moss (15 min)
    • 0.5 tsp yeast extract-based yeast nutrient
    • nutrient tablets (15 min)
    • 0.5 cup corn sugar to prime
    • Filtered Chicago tap water with 2 tsp gypsum per 5 gallons

    Specifications

    • Original Gravity: 1.072
    • Final Gravity: 1.012
    • ABV: 7.88%
    • SRM: 11

    Directions

    Mash in at 152°F (67°C) and rest for 60 minutes. Mash out at 170°F (77°C) and hold for 10 minutes.

    Primary fermentation for seven days at 65°F (18°C).

    Secondary fermentation for 14 days at 65°F (18°C).
