Thomas Eibner of St Paul, MN, member of the Saint Paul Homebrewers Club, won a gold medal in Category #26: Other Mead during the 2012 National Homebrew Competition Final Round in Seattle, WA. Eibner’s Other Mead was chosen as the best among 97 final round entries in the category and helped earn the 2012 NHC Meadmaker of the Year title.

Rhubarb Mead | Mead

Ingredients

  • For 3.5 Gallons (13.25 L)
    • 12.0 lb (5.44 kg) wildflower honey
    • 40.0 lb (18.14 kg) rhubarb
    • 1 gallon (3.79 L) water
    • Lavlin 71-B dry yeast

    Specifications

    • Original Gravity: 1.14
    • Final Gravity: 1.005
    • ABV: 17.72%

    Directions

    1. Staggered nutrient addition.  Ferment in primary for six weeks; rack, clarify, keg, force carbonate.
    2. Forced CO2 to carbonate (2.5 vol).
