  • For 10 gal (37.8 L)
    • 28 lb (12.7 kg) 2-row malt
    • 5 lb (2.27 kg) Weyermann Munich 2
    • 2 lb (0.91 kg)  Simpson's chocolate malt
    • 1 lb (0.45 kg) Simpson's dark crystal
    • 1 lb (0.45 kg) Simpson's light crystal
    • 1 lb (0.45 kg) Simpson's extra dark crystal
    • 1 lb (0.45 kg) Crisp pale chocolate malt
    • 12 oz (0.34 kg) Briess Midnight Wheat malt
    • 5 lb (2.27 kg) dark candy sugar
    • 1 oz (28 g) Mosaic hops (180 min)
    • 1 oz (28 g) Glacier hops (180 min)
    • 2 oz (56 g) Magnum hops (60 min)
    • 2 oz (56 g) Glacier hops (15 min)
    • 1 oz (28 g) Mosaic hops (15 min)
    • 2 oz (56 g) Mosaic hops (flameout)
    • 2 oz (56 g) Glacier hops (flameout)
    • British ale yeast

    Directions

    Single infusion mash at 148° F (64° C). Keep fermentation temperatures on the cooler side of the yeast strain’s temperature range. If Glacier hops aren’t available, Willamette can be substituted.
