Edward Walkowski of Dalton, PA, member of the SAAZ (Scranton Area Amateur Zymologists), won a gold medal in Category #27: Standard Cider and Perry during the 2011 National Homebrew Competition Final Round in San Diego, CA. Walkowski’s Standard Cider and Perry was chosen as the best among 96 final round entries in the category and helped earn the 2011 NHC Cidermaker of the Year title.

Ingredients

  • For 6 Gallons (22.71 L)
    • 6.0 gal Ritter’s Cider Mill Bartlett pear fresh cider
    • BA-11 yeast
    • Super-Kleer to clarify

    Specifications

    • Original Gravity: 1.062
    • Final Gravity: 1.004
    • ABV: 7.61%

    Directions

    1. Primary fermentation for 3 weeks at 64° F (18° C).
    2. Forced CO2 to carbonate (1.7 vol).
