Robert Hilferding of Zephyrhills, FL, member of the Special Hoperations, won a gold medal in Category #9: Scottish and Irish Ale during the 2014 National Homebrew Competition Final Round in Grand Rapids, MI. Hilferding’s Scottish and Irish Ale was chosen as the best among 310 final round entries in the category and helped earn the 2014 NHC Homebrewer of the Year title.

Way Off Kilter | Scottish Light 60/-

Ingredients

  • For 5.3 Gallons (20 L)
    • 9.0 lb (4.08 kg) pale two-row malt
    • 1.1 lb (0.49 kg) 20° L Munich malt
    • 0.25 lb (113 g) 40° L crystal malt
    • 0.1 lb (45 g) roast barley
    • 0.1 lb (45 g) chocolate malt
    • 0.7 oz (20 g) E.K. Golding pellets, 5% a.a. (60 min)
    • 0.88 oz (25 g) E.K. Golding pellets, 5% a.a. (15 min)
    • 0.7 oz (20 g) E.K. Golding pellets, 5% a.a. (5 min)
    • 0.48 oz (14 g) E.K. Golding pellets, 5% a.a. (0 min)
    • Wyeast 1728 Scottish ale yeast (1 L starter)
    • 1 tablet Whirlfloc

    Specifications

    • Original Gravity: 1.047
    • Final Gravity: 1.024
    • ABV: 3.02%

    Directions

    1. Single step infusion mash at 155° F (68° C). Mash out at 168° F (76° C) for 25 minutes and commence sparge.
    2. Primary fermentation for 4 days at 67° F (19° C).
    3. Secondary fermentation for 10 days at 67° F (19° C).
    4. Forced CO2 to carbonate (2.4 vol).
