Owner and head brewer of Snowbank Brewing Company in Fort Collins, CO Dave Rosso did not want to stick to the standard mead recipe on Big Brew day in 2016 so he decided to try something a little different—Tej, an Ethiopian-style mead using gesho entchet. Gesho entchet are Ethiopian aroma hop stems, which when used in mead add a nice bitterness to balance out the sweetness.

If you have a little spare time to source gesho and a love for a little international adventure, this mead is sure to please!

Cider generally doesn't contain much in the way of yeast nutrients, so most hard cider recipes call for an addition. However, malted barley wort does contain yeast nutrients, and low-gravity wort "tailings" collected after you've finished sparging a high-gravity all-grain beer are easy to com by—just sparge a bit longer once your beer volume has been reached. The extra low-gravity wort provides excellent yeast nutrient for cider fermentation and lends a pleasing body, flavor, and complexity.

After experiencing 3 Floyds Zombie Dust during a local bottle share and realizing the American pale ale isn't distributed in his home-state of Texas, homebrewer Clifton Ellis set out to create his own version of this "liquid euphoric experience," as he recalls it.

Using clone recipes found online and adding his own twists, Ellis brewed up his Zombie Dust-inspired American pale ale and entered it into the 2016 Blue Bonnet Brew-Off competition. Ellis's recipe earned a gold medal, qualifying him for the Great American Beer Festival Pro-Am competition which he entered with Panther Island Brewing (Fort Worth, TX).

Based on the strong, well hopped ales that England once shipped to the czar's court, Expedition Stout measures between 10 and 11 percent ABV. You don't seek out a beer like this just for the buzz, that's for sure. Expedition Stout goes well with a wide variety of foods, from roasts and steaks to rich chocolate desserts.
