Scaling and cloning recipes is challenging, whether trying to clone your favorite craft brew or taking your favorite homebrew from five gallons to 50 barrels. Warren and Jason will discuss recipe scaling and method and equipment use in the process. Raw ingredients, brewing method, fermentation control and packaging will be analyzed to determine the best methods and most likely pitfalls. The speakers will take a core Devils Backbone beer and downsize it to homebrew scale, brew the beer using the exact same malts, hops, water and yeast, and then present the beers side by side for evaluation. Both samples will be sent off for full lab analysis of ABV, IBU, color, etc., to determine exactly what worked and what didn’t.
