Mead Recipe of the Week: Adore

In honor of Mead Day, on August 4, the Best in Show mead recipe from the 2011 National Homebrewers Competition is the Beer Mead Recipe of the Week! Monique Scovil of Aurora, Colo., submitted her semi-sweet standard melomel with pluots into category 25, which had a total of 132 entries. Adore took gold in category 25, won Best in Show, and gained Scovil the title of 2011 Meadmaker of the Year. If that isn't testimant of a quality mead recipe, than we don't what is!

Ingredients

6 US Gallons (22.71 L)

14 lb (6.35 kg) wildflower honey
Yeast energizer and nutrients
Pluots (amount unknown)
Pectic Enzyme
Potassium sorbate at primary
Potassium metabisulfite at primary
Acid blend at bottling
1 packet of liquid Superkleer to clarify
Filtered St. Paul water up to volume
Lalvin D-47 dry yeast

Directions

Mix water and honey, stir vigorously to oxygenate. Add the yeast energizer and nutrient to the must. Add the fruit and the pectic enzyme. Add the yeast on top of the must. Ferment completely, watching for signs of slowing fermentation. Rack to secondary and age until clear.
