Randy Mosher

Randy Mosher is an author, lecturer and consultant on beer styles and brewing. He is an instructor for the Siebel Institute in Chicago and the author of three books on beer and brewing:The Brewers Companion (Alephenalia, 1991), Radical Brewing (Brewers Publications, 2004) and Tasting Beer, (Storey Publications, 2009).

Additionally, Mosher is a branding packaging and new product consultant for an international range of clients in the brewing and beverage business.

Hi, I was working in Bolivia in the 70's and drank local beer known as Chicha. The ladies (brewers) would put out a red flag outside their shop when the brew was ready. It was made of ground corn, sugar, or with molasses, water and yeast. As I remember the procedure they boiled the corn and sugar, then cooled it down and added yeast. 3 to 7 days depending on the temperature it was ready. The Alcohol content was low, like "near beer" but refreshing. I would like to make some. Does anyone know the proportions? Thank you

Frank - You can get information about this brew by two different methods. Click on Zymurgy-->Archives and type Chicha in the Keyword field. This returns several Zymurgy articles about Chicha, but the articles are not online, so you'd have to get the issue referenced. Or, on the Home page of this web site, click on Homebrewopedia. Go to Recipes and look under category 23. There is a Chicha recipe there. Cheers!
