That's where it gets tough. It depends on the beer and the level of fruit you're looking for. In a stout (or any beer) better to start small and work up on the next batch. Maybe 12 oz-ish, takes good notes, and adjust up on the next batch if needed.

I used a quart of concentrate in a cherry hard cider and that provided good cherry flavor that didn't overpower the apple.
