The classic German hefeweizen strains throw H2S. I get that.

But hoo boy, Stefon really throws H2S. It's my first time using it; I usually use 3068 or WLP300. Stefon is stinking up the whole house. My wife got home and asked me if I was feeling alright as soon as she opened the front door. I said, I swear it's not me, it's the hef fermentation. I'm not sure she believed me.

That said, I don't necessarily worry about the rotten-egg smell for hef fermentations. I have confidence that the sulfur will subside. But WOW...

I love imperial yeast but not a hefe guy. More of a Dieter kind of guy.
On Tap/Bottled: IPL, Adjunct Vienna, Golden Stout, Honey Lager
Fermenting: IPA
