Tiempo maduracion

Buena tarde, soy nuevo en esto de la elaboración de cerveza artesanal, he de llevar unas 5 tandas, hace unos dias prepara una tanda de 10 litros la cual la hice con extracto de malta, mi procedimiento fue el siguiente fue el siguiente:

* minuto 60 inicia hervido de aprox 13 litros de agua.
* minuto 4 piezas de piloncillo (aprox 500 gramos).
* minuto 40 adición de onza de lúpulo east kent golding.
* minuto 20 adición de 1/2 onza de lúpulo centenial.
* minuto 0 apagar, tapar y dejar reposar 5 minutos.
* enfriar hasta bajar temperatura
* hacer whirpoling
* con manguera realizar sifón para vaciar a fermentador oxigenando el mosto.
* adicion de levadura y tapar.
* 8 dias de fermentacion, como ya dije a falta de materia no pude medir la densidad inicial mucho menos la final, aun que el sabor del fermentado es bueno como los anteriores
* hago el priming con azucar y agua a razon de 6 gramos de azucar por litro de cerveza.
* por ultimo hago el embotellado.

El proceso de fermentado y madurado dada la zona donde me ubico no es de lo mas fresco así que la temperatura promedio oscila entre 26°, y 29° o incluso 30°. Las botellas como son reusadas (obviamente bien lavadas y sanitizadas corcholatas, instrumentos, todo), sobre la iluminación, si bien no hay completa oscuridad, esta mas oscuro que iluminado.

Al parecer hasta aquí todo bien, lo raro que me resulta es que 6 días después del embotellado, según recuerdo con las tandas anteriores debería de haberse ya sedimentado toda la levadura, o mas bien cuanto tiempo tarda en sedimentarse, mi idea es dejarlas mínimo 2 semanas de maduración y gasificación natural. Muestro como se ven actualmente las cervezas despues de 6 dias, estoy exagerando, es normal, asi tardan, que me pueden comentar?

The beer will carbonate faster with the temperature that high but it will take longer for them to clear. As you can see, the beer is slowly clearing at the top.

You need to get the bottles out of the light, especially because you used clear glass. Put them in a closet, cupboard or cover them with something to block the light.

thanks for your answer, at first i am getting scared because i tought they were contaminated or something.

hi again, something weird it's happening and definitely don't know why, i bottled first 10 litters of beer (https://ibb.co/XC24X0T) this beer has been maturing for 9 days with least changes, but 2 days ago i bottled other 10 litters and now these beers are fully settled and clear.

the weird i think in here is, the 2 batches are in the same place, with the same conditions, non completely darkness, temperature 26°C-30°C, 78°F-86°F, same priming measure.

yes, they are the same recipe:
* cooking extract 1 hour
* 40 minutes adding 1 oz east kent golding
* 20 minutes adding 1/2 oz centenial
* cooling in between 20 and 25 minutes
* whirpooling
* safale s33 yeast

the only thing i could think were diferent, quantity in first batch are 9 litters in second batch are 11 litters

Every fermentation is different. Is the first batch you bottled continuing to clear from the top down? If so, I wouldn't worry too much. Just give it some time.

finally decided to try one beer and although it does taste like beer, but it tastes like an open beer from days, and it was very bitter.





i hope this ones are better
