Old Weyermann Hefeweisen LME... what to do with it?
« on: November 13, 2010, 04:26:39 pm »
Hello All,
I have two 8.8 lb containers of Weyermann Hefeweisen LME that was given to me.  They are getting old so I am sure the color is a bit darker than it should be.  I am trying to come up with a beer to brew with it.  I was thinking of an old ale.  Any other ideas?

Cheers,
Brandon

Yeah, dunkelweizen or with that much of it, a weizenbock, or weizen dopplebock, or even an eisweizenbock.  It sounds good to me anyway.

wouldn't you need a big freezer to make a eisweizenbock? or am I misunderstanding the Eis part and it isn't a ice filtered beer?

Yes, but no problem....... chest freezers will hold multiple corny kegs

Exactly, you can throw it in a freezer and then rack from there to a new keg.  If you don't have the equipment and don't know anyone who does, then I'd go with the weizen dopplebock along the lines of Aventinus, I love that beer. ;D

You can do one of the other styles too, you have enough extract to do more than one batch. ;)
