Ask any professional brewer how they got started and chances are they’ll mention a homebrew kit.

Kevin Ryan had just that sort of beginning when his fiancée Meredith gifted him a beermaking kit for Valentine’s Day. That kit was the seed that would eventually flourish into Service Brewing Company in Savannah, Georgia. Today, Kevin and Meredith brew and serve craft beer to thirsty patrons while also raising awareness and support for our nation’s veterans and first responders, a cause very important to Kevin who is a West Point graduate and former Army commander.

To celebrate their homebrew roots during American Craft Beer Week 2018, the Service Brewing crew decided to brew a beer in honor of the man who helped guide Kevin down the path of beer making: our own Charlie Papazian! Charlie’s book The Complete Joy of Homebrewing was one of the first brewing books Kevin cracked into, and it kick-started his journey into the world of professional brewing.

The recipe, aptly named “The Charlie,” is a citrus pale ale (CPA… Charlie Papazian… get it?) with a hefty dose of hops and an addition of pink guava. This hop-forward ale will satiate even the hoppiest of hop-heads, and the pink guava puree adds a little extra somethin’-somethin’ to keep your palate excited. And, of course, this recipe includes a hefty helping of relaxation, since Charlie would have it no other way!

  • 2.5 g gypsum (mash)
  • 1.0 g Epsom salt (mash)
  • 0.75 lb aseptic pink guava puree (dry)

Directions:

If desired, add the gypsum and Epsom salt to the strike water. Conduct a single infusion mash at 150° F (65.6° C) for 75 minutes. Sparge at 168° F (75.6° C). Boil for 60 minutes, following the hop additions as noted in the ingredients. Ferment at 65° F (18.3 °C). After primary fermentation is complete, add dry hops and puree and allow to soak or a few days. Carbonate to 2.3 volumes of CO2.
