Thanks for that.  I like the quote that beer "invented itself", as just about anything organic will ferment.  It's a good thought to keep in mind as we ferment our very sanitary wort with pure strains in glass, plastic or stainless.

It's nice to get rustic once in a while, both as a nod to history and a reminder of what we often take for granted.

Very interesting.  I think Dogfish Head did something similar a couple years back...
