Speaking of saison, I'm sitting inthe airport waiting to fly to LA to brew saison with Drew and John Palmer...clam chowder saison.....yes, it's true.  We'll be serving it at our talk at NHC.

I've had oyster stout, and it's good, so why not?  I agree spoilage seems like it "should" be a concern, but I don't know what's actually occurring that prevents it in oyster stout.  I'm guessing the low pH and alcohol, the same weapons beer normally fights bacteria with.

I believe that if a saison can have clams and potatoes in it, then my wheatless saison should still fit.

Actually I'm only surprised by saison being the vehicle for this because it seems Like the wrong mouth feel. Next up, corn chowder lager: pilsner malt, potato flakes, short boil.

I hardly recognize Drew without his lab coat and cap....three guys that are pretty big hitters in our corner of this world.  And amazingly approachable at last summer's NHC.  Wish I could go to SD this year, but alas, time is tough to come by as it is....

I also got bored and decided to write this up:

Thanks for that! My only concern is that it almost looks like you're encouraging people to use spices.
