Why do they always have to change everything around in Chicago? 

I learned how to make horchata from a Mexican.

My simple Horchata is made By simmering a mixture of one cup rice with a half gallon of fresh clean water. Added is a fist full of chopped almonds, a cinnamon stick a vanilla bean sugar and a pinch of salt. 

Simmer till the rice is falling apart and strain through cheese cloth. Awesome!

Rice milk, soy milk, almond milk and coconut milk can be fermented. Most curiously with me by kefir grains among other things.. Hmmm?

Too bad the Mexican wasn't from Chicago, you'd be making the right stuff then.  :P

Ingredients

    * 1 cup uncooked white long-grain rice
    * 5 cups water
    * 1/2 cup milk
    * 1/2 tablespoon vanilla extract
    * 1/2 tablespoon ground cinnamon
    * 2/3 cup white sugar

Edit:
12.5% of the population were Hispanic and Latino of any race. (Philly)
Hispanics or Latinos (of any race) make up 27.8% of the population. (Chicago)

Almond Rice Pudding

Ingredients
3/4 cup leftover cooked rice, preferably basmati or jasmine
3/4 cup almond milk
1/4 teaspoon ground cinnamon
1/4 cup crushed pistachios
1/4 cup sliced California Almonds, roasted
1 teaspoon honey

My colleagues all perked up when I said Horchata! They got real excited.

Dang I been at werk all nite while this thread blossomed.  As for the real thing;....
dang 1 and 2 %    milk is IMO white water MILK WANNABE....gimme the ole stuff
before it goes thru the seperator...and you cannot even get that legally here in BFE WHYO.
Whole millk is some what tolerable, but I like the cream floating on the top ....where is that stuff?

I guess you all keep that stuff up in dairy land for yourselves....I do not have the desire to
milk two times a day every day....no thanks....

This Almond product was to me a nice rich thick creamy delicious alternative to
1 and  2 % and gag...skim milk stuff they sell now a days.
Not lactose intolerant, just like rich creamy whole milk.

The "New" part was just saying " new to me...."
And Cap, thank you for broadening my sheltered existance with your wealth of culinary knowledge.

Yeah, the horchata I've made was cinnamon and vanilla flavored, no almonds.  Very good stuff, although a bit too sweet for me even after I cut the sugar in half.  My kids really like it.

Euge ask them more about this technique. I have heard of it being done this way but cant imagine how it would work. It wont be creamy at all. How long do they soak it for?

Basmati rice makes delicious horchata,

I dont like it but a lot of people put lime zest in horchata.

Anyway, to my surprise, mrnate pointed out that some dairies have permits to sell raw milk to the public in PA.. We have been getting raw un-homogenized milk right from the farm lately. Wonderful stuff.

Pasteurization is a lot of hooey. They have been ruining our milk for years, and they have laws that make the dairies ruin it too.

  That is what I was getting at Cap, just did not wanna open a can of worms about govm't regs. There was some
news article here this week about this very thing and ppl have to drive hours to be able to get this product.  OTOH, I
would not want to get some of the illnesses that can be contracted from milk.
