By the way my Dad has a recipy of "Cochinita Pivil"
(No translation other than Pivil style little pig)
Or basically Annato braised pork loin.

Using Achiote OJ and vinegar and about 3-4 hours
in the oven on the lower end of the thermometer.

I think Achiote would be a key part of the Al Pastor
recipy. Annato seeds are the key ingredient in Achiote.

If memory serves me right...
