Working from my home office today.  I have four 5-week-old kittens that have discovered how to climb up my legs.  Trying to intimidate them I growled in my best Iron Giant voice, "I AM NOT A TREE!"  - No affect.

Thinking about making kitten gumbo for lunch...  :D

Clam Risotto!

2 cups Arborio rice
6 cups shrimp stock (substitute 1 cup white wine if desired) and water at end as needed.
1 small onion minced
1 cup fresh grated Parm
1 can baby clams rinsed well
1 cup chopped fresh baby spinach
1 cup chopped saute'd broccoli rab
1 tbs butter
3 tbs of olive oil
Pinch of red-pepper flake
S&P to taste at end

I used Chris Kimball's Kitchen Detective technique. Turned out as good as any risotto as I've had in a restaurant. Maybe a bit better since I made it. ;) Add butter, cheese, greens and clams at the end. I found the stock salty enough so added only a small pinch of salt to wake it up a bit.

Takes 20-30 minutes to prepare.

MMMMM. Smoked lamb's breast and chickpea curry with spinach served over whole wheat couscous.

Slightly carmelized onions and garlic and remove from pot. Sear scored left-over lamb's breast and remove from pressure cooker. Add 2 cups chicken stock onions-garlic, soaked chickpeas and spices. Bring to a boil, return lamb and seal pressure cooker. Cook for 20 minutes. Natural release. Remove lamb and add fresh spinach (couple cups packed). Return to boil and reduce a bit while spinach wilts. Add lamb back to mixture and toss. The "scored" lamb falls into bit-sized chunks.

Serve over couscous or basmati rice.

Euge, where do you live that you can eat like that every day? Looks awesome. The torta reminds me of my all-time favorite This-is-why-you're-fat sandwich, the Jibarito from Borniquen in Chicago: http://en.wikipedia.org/wiki/Jibarito - bread is replaced with flattened fried plantains, insides are steak, garlic mayo, shredded iceberg lettuce, american cheese and tomato.

Had this for lunch over the weekend. They call it a #4 plate: two crispy beef tacos and two cheese enchiladas with rice and beans. I didn't need to eat for the rest of the day.

Today, I had a good ole' strawberry fluffer-nutter, potato salad, and a bottle of Kilt Lifter. sometimes, comfort lunches are the best!
