Cigar City brewmaster Wayne Wambles deemed this recipe “pretty close to classic Jai Alai circa 2009-2010.” He made a few suggestions to bring this recipe closer to the original, including the use of the Thames Valley ale yeast strain, Munich malt in the 6-10*L range, and an updated water profile that “pushes the sulfate up to 150 ppm and the chloride up to 125 ppm. This will jack up the calcium, but we find that quite a bit of it precipitates out.” Many thanks, Wayne!
