Keith Eisel of Raleigh, NC and member of Cary-Apex-Raleigh-Brewers-Of-Yore (CARBOY) won a gold medal in Category #7: Amber Hybrid Beer during the 2016 National Homebrew Competition Final Round in Baltimore, MD.   • For 5.25 gallons (19.87 L)
    • 8 lb (3.63 kg) US Pale 2-row malt
    • 0.75 lb (340 g) 40°L crystal malt
    • 0.75 lb (340 g) 60°L crystal malt
    • 8 oz (227 g) dextrin malt
    • 0.38 lb (172 g) Victory malt
    • 0.75 oz (21 g) Northern Brewer pellets, 10.2% a.a. (FWH)
    • 0.5 oz (14 g) Northern Brewer pellets, 10.2% a.a. (20 min.)
    • 0.5 oz (14 g) Northern Brewer pellets, 10.2% a.a. (0 min.)
    • 0.25 oz (7 g) Northern Brewer pellets, 10.2% a.a. (dry hop)
    • 1 tsp (5 g) Irish Moss (10 min.)
    • White Labs WLP810 San Francisco Lager yeast (1.5 L starter)
     

    Specifications

    • Original Gravity: 1.052
    • Final Gravity: 1.010
    • ABV: 5.5%

    Directions

    Mash at 152° F (67° C) for 60 minutes. Mash out at 168° F (76° C) for 10 minutes.

    Primary Fermentation: 12 days at 62° F (17° C)

    Secondary Fermentation: 23 days at 55° F (13° C)

    Carbonate to 2.4 volumes of CO2.
