John Palmer explains the Water chapters of How To Brew, outlining how he reviews his own tap water profile and uses the guidelines and software to adjust that water to best fit the recipe that he is brewing. Four recipes will be discussed: West Coast IPA, Hazy IPA, Munich Helles, and Robust Porter.

  • Understand how water composition affects beer flavor in three ways: seasoning balance, seasoning level, and beer pH
  • Explore how the mineral composition of the water has a small but significant effect on the flavor of the beer
  • Discuss why the mineral composition of the water has a significant effect on the pH of the mash, which has a significant effect on the beer pH, which has a significant effect on how beer flavors are perceived by your palate
  • Learn how and when to add salt and acid additions to your recipes to achieve the best beer
