That sounds good I haven't brewed with Amarillo for awhile.
I’ve never done an all (outside of bittering) amarillo beer before which is weird because it’s one of my favorite hops. Brewing now. Been having some efficiency issues of late so curious to see where it ends up.
On Tap/Bottled: IPL, Adjunct Vienna, Golden Stout, Honey Lager
Fermenting: IPA
Up Next: mexi lager, Germerican pale ale

Thanks! Took off so much quicker than I’ve experienced with this yeast. Worried I have a wild yeast infection thing going on or something. Time will tell.

Little late to the thread------

Past Sunday I brewed 4.5 gallons of a German Pils. First time trying this style.

8.5 pounds Viking Pils malt (I have heard great things about this malt). German Magnum at 60 minutes, Mittelfrauh at 5 minutes. Diamond Lager yeast.

OG 1.050

This weekend looks like a helles (80/20 Pilsner and Munich 1) with Edelweiss hops and the yeast is the combo of Diamond and 34/70.  Not sure which day but it's looking like Saturday.

We are having one of the nicest Octobers that I can remember. Warm, sunny, no wind. That is all ending today. So, yesterday I brewed a Classic American Pilsner.

10 gallons, OG 1.060 (overshot my target of 1.055)

16 lb. Rahr 6-row
6 lbs. flaked corn
12 oz. Weyermann acid malt

Mash at 153°F for 90 min. Batch sparge.

2 oz. Saaz 5.2% FWH (I cannot recollect ever seeing that high of AAU for Saaz before)
2.2 oz. Cluster 90 min
1 oz. Styrian Goldings knockout.

3 packets of Diamond lager yeast split between two fermenters.

Standard Template Lager with rice. An American lager for the holidays for when my sons are in town.

This is my first time brewing with rice. I simply cooked some Jasmine rice using my standard sticky rice method (2 cups water for 1 cup rice, 20 minutes boil, then sit for 15-20 minutes). My efficiency was right on so, I guess that gelatinized the rice okay.

1046 OG, 3 gallons
91% Pilsner malt
9% Cooked rice
16 IBU Edelweiss @ 60
1.5 oz. Edelweiss at 0.
Diamond slurry.

I forgot to add lactic acid. We’ll see if that matters. Predicted PH was 5.85. I didn’t measure it.

I find Edelweiss to be fairly low on flavor, so I used a lot.

60 min Mash, 1/4 t gypsum
60 min Boil, 1/4 t gypsum
10 min Boil, Yeast Nutrient

BIAB, Double Drop

Just kegged my homage to Houblon Chouffe. A fantastic beer that I haven't been able to find since I was in Belgium 3 years ago. I'd made 3 previous attempts, and the third time was a charm. I love it when it finally works.
