I read it all.

We have it. Bought two of the 800 and it'll be pitched into 10.5 gal of 10.6 brix wort.

Got opinions on the whole issue but will reserve them until a later date when more data is in!

All of the WLP pure pitches worked on all beers of reasonably middle ground ABV levels without the need for starters.

Must be nice to get fresh yeast. I can only buy yeast online and the freshest one I ever got was 3 weeks old. That was once in 10 years. The average time is at least 60 days and I received one that was over 90 days old. I guess living in Canada is the reason. White Labs should build a lab in Toronto.

wow going after lager with no starter...braver than I sir!  make sure to report back-curious if it does the trick on its own.

How about a 90 hour lag for such a low gravity beer? >:(  Even though I knew better I did it anyway. ;)

And the pitch is tiny. Perhaps 15ml per packet? Which also was pitched into 55* beer. I needed 2-3 times the amount. My bad.

We'll see how the pils turns out. I'm sure there will be off-flavors.

This was my question as well. I have 2 lager batches coming up, each 1 is 3.5 gallons, and are projected at 1.047&1.048. Waiting on my 835 pouches from the vault(out of town last week, had them put a hold on shipment) just wondering if one pouch unstarted would suffice for these batches. They are both first time brews: Ken's Northern German Pils, and conveniently, a Pils from Brulosopher as well. Any thoughts on need for starter in these batches?

Fermenting: Nothing (ugh!)
Conditioning: Nothing (UGH!)
In keg: Nothing (Double UGH!)
In the works:  House IPA, Dark Mild, Ballantine Ale clone(still trying to work this one into the schedule)

well- as indicated i haven't tried this with lagers.

i might be inclined to throw both pouches into 1, 3.5 gal batch, harvest that slurry and then use for subsequent batches.

The directions say one packet of pure pitch is enough if the wort is warm then to cool it once signs of fermentation show. If you pitch directly into 50-55* wort (optimum range) 2-3 packets may be needed.

In a three gallon batch maybe two?

But a starter really sounds like the best approach. Play it safe. Not like me. I like experimentation.

Thanks guys, guess I will likely go with Ken's route. It will delay one batch, but should help ensure proper fermentation completion. In that case, I will likely go with Ken's Pils and his suggestion

WL says you should have at least 200b cells with two fresh pouches. for 1.048 OG and 3.5gal batch size, target pitch is about 230B.  so you're right on the threshold-depending how fresh the yeast is.

Frank- If you can, you could also to throw 2 pouches into 3L 1.036ish starter and then split the slurry from that for two batches.

^^^^this on stir plate nets projected 590B cells

Or 2 separate 1.5L shaken not stirred starters? I think in the end, I will go with both in 1 batch in order to try to maintain the simplest approach, as that is what the pure pitch is supposed to be for anyways.  I don't want to mess around with splitting a starter, or transferring a starter with yeast that is supposed to be fresh and as pure as they make it, especially on smallish and low ish OG batches. Glad I asked and did not just pitch 1 pouch per 3.5 gallon

certainly 2 starters works also...whatever is easier for you.  i'd be hesitant also with 1 pouch per batch for lager-but every new theory needs an experiment Frank  ::)
