yeah that sounds about right..i can tell from pic it looks a little under carbonated..oh well-it's good now boys  ;D

50% avangard vienna, 22.7% avangard pils, 18.2% avangard dark munich 15lovi, 9.1%carahell.
28.4IBU- 17.4IBU merkur bittering, 11.1IBU Hallertauer last 10minutes.

Mash: RO water w/ profile amber balanced with 40ppm cacl, 13ppm mag, 17ppm NA, 78ppm sulfate, 60ppm chloride.

mash 60min 144F 5.5PH. 60min 162F. batch sparge. adjust with lactic in kettle to 5.25PH.

Pitch yeast into 48F wort after O2 for 90 seconds. hold 49F until 65%ADT, pull from fridge and let rise to 60F and hold until finished. cold crash, fine and keg.

OG 1.054
FG 1.010
5.8%ABV

Awesome, Ken. Thanks. The body on it was ridiculous; very fully. Malt character was very nice too. I'm going to be trying the 60/60 mash schedule as well. Did it on a 3 gallon batch of helles last week. Felt kinda bummed about spending so much time on the mash to only get 3 gallons out of the deal... Oh well. Doing it on a Kolsch tomorrow.

yeah that's something i've noticed on the 60/60 mash...body and mouthfeel seems different/enhanced to me without residual sweetness.

Looks great!  I don't have anything to back this up, but I'm wondering if there isn't something to the boil kettle foam skimming helping your head retention.  I get great foam on the initial pour, but most of my beers fall into the "good" category for retention.  The foam typically drops to a modest layer or thin ring after some time.  Pale ales are an exception to this, but I give credit to the hops there.
