Ah Ha!  So, the pineapple was added to the boil.  Then the enzyme was likely denatured.  Obviously, there may be some pectic enzyme, but who cares in a wheat!  Good to know.  How much pineapple did you use?

I have made a couple of coconut beers in my day. If it's in a keg, I think the head retention is a non-issue.  The beer is pulled from the bottom while the oils from the coconut float on top.  At least that has been my experience.

My coconut milk stout comes out of the keg w/ good head, but doesn't last too long. 

I currently brew 3 gal batches, and w/ the pineapple wheat I used one large fresh pineapple that I cored and cut into cubes.  I then did a quick blend in a blender to open up the cubes and extract some of the juice.  I then added it all to the boiling wort.  I was actually shooting for more of a pineapple flavor than I got, but you can tell the pineapple is there.  People who tasted it that didn't know it was in the beer detected the pineapple.  I may try to add more next time, but I don't want to over power it.

Yum! I love Munich helles.  Which yeast did you go with? I just kegged a munich helles with WY2124 Bohemian lager yeast yesterday.  Might not be the best yeast for the style, but the sample still tasted good.

2124 is my favorite yeast for Munich Helles, which is also my favorite style to brew.  Yum!

IPA with cascade, centennial, and amarillo. Its just about gone - I think I have a few pints left, but there was enough to make it through IPA day. Some home grown centennial are around the base of the glass.

An Abbey ale brewed 1/4/12. Was good at 1 month but has ripened into something quite tasty!

This is a Saison blend. One batch with WLP 565 and a second batch using WLP 566 then blended 50/50. I used the zest of Lemon/Lime/Orange, bitter orange peel and coriander the last minute of the boil.

My club, the Three Rivers Underground Brewers, puts on a benefit every October for Cystic Fibrosis.  Through the first 5 events we have donated well over $100K.  This year my offerring for the VIP session will be Blueberry Wit, as seen in one of our tasting glasses.

Doppelbock:  Rich and malty, a little bit of bread, very clean.  May be my best yet.

A Black IPA dry hopped with Amarillo.  First time using Carafa III malt and loved the creamy mounthfeel it created.
