I'm gonna brew a Vienna lager this weekend. Thinking going full Low DO with Brewtan B this time. Base is going to be all Vienna, with 8oz of carahell and a couple ounces of dehusked carafaIII for color.

I know. I did a low DO all Vienna pale ale with chinook and simcoe, kegged it 2 gravity points before it was finished. It's the best beer I've ever brewed. So fresh and amazing and I love the Vienna malt in a pale ale. I'm wanting to try more all Vienna malt beers.

You using Best for your Vienna malt?
I think I'm on the straight up Weyermann Vienna. Ordered the Barke Vienna through my homebrew club, but we couldn't get it and got the regular Vienna. Was using Best, decided to switch it up for a change...

If the planets align I am gonna do a NGP today.  Uber hochkurz/30m boil/60F ferment with 3470 so it is a very traditional take on the style  ;D

I finally had some time to get a few things done in the brewery.  Friday night I made a starter for next weekend's Belgian Strong Golden, yesterday I bottled 3 gallons of brett cider that's been sitting on oak cubes since January, and today I'm chilling down a batch of saison that I plan to keg in a few days.

Woof.  Knocked out two brews today for the Brew United Challenge.  First all-grain in some time, but I hit my numbers pretty well.  Better efficiency than I counted on and a little extra wort on both. 

Third batch (scraps from the two planned batches) is chilling right now.  Hopped with hops I picked in Montana last summer.  I'll pitch whatever dry yeast I have sitting around.  Probably Nottingham though I hate that yeast.

The only frustration of the day was the one mash tun that won't drain properly.  Took like an hour to drain the mash and the sparge so the second batch caught up and was boiling first.  I think I need to ditch the ball valve.

To further illustrate how traditional this pils would be, I used Briess 2 row and Santiam late hops.  ;D  I have always been underwhelmed by using German hops and originally planned an all german tettnanger but LHBS was out.  Averted the mistake of using US tett thanks to a quick google on the phone...  I am not easily impressed but the santiam smelled and the resulting wort (30m hopstand) smells exceptional.  Excited...

Awesome! Please keep us posted on the 30 minute boil results. Can't wait to see what you think.

Oh yeah, also draining my mash tun for a Helles Exportbier today. Will reuse the yeast for a Doppelbock. First one I have brewed in many years. Lots has changed since my last attempt which was a 13 hr decoction mash day. That won't happen again!  :D

Brewed an IPA bittered with Columbus to 65 IBU.  Then whirlpooled at 170 with Galaxy, chinook, Columbus ,centennial, and cascade.  12 oz.  then I will dry hop with 3 oz citra.  Grain bill was split Pilsner, 2 row.  5% carastan.  Looking forward to this one.  Hopefully not too muddled with all the hop varieties but it was a freezer clean out.

I usually do a 'Leftovers IPA' every year with some 'old' hops. It's kind of fun to see what the combo ends up being. Always comes out good, sometimes great.
