Just got back into steady brewing again. got some friends who wanted to learn how to brew, put them to work doing the heavy lifting, and we brewed up a vienna mandarina pale ale, IPA, and robust porter over last 3 days.

19# Pils (just used Weyermann Barke today but 70/30 with pale malt is good too)
1/2# carafoam
1/2 # sauermalt
1/2# flaked barley (yeah I know sue me)
30 ibus fwh tettnang
10 ibus mittlefruh at 20
3oz mittlefruh at knockout
WL830

Probably don't notice/need it but...

Initially added for body, foam and a little malt complexity.  I've been making iterations of Pils for over a decade and decided to add a smidge of FB about a year and a half ago, and that Pils was my favorite all time.  I've made it about 6-7 times since, and it hits the spot for me.   I might try removing it at some point to see if it's missed but hard to mess with what has worked.

One change I do want to incorporate though is mixing up the Pils base with pale - my Helles definitely benefited from that but I haven't tried it on Pilsner yet

From personal experience, Weyermann Pale Ale blends well with Weyermann Pils. Vienna blends well too. My base blend is usually Pils/Vienna.

From personal experience, Weyermann Pale Ale blends well with Weyermann Pils. Vienna blends well too. My base blend is usually Pils/Vienna.
I like blending schill Kolsch malt in my base for twist / variation.
